Rose Ilaneer Delight ...To raise a toast for Super Star

12.12.12....

Happy Birthday To Rajini Sir....

I am a die hard fan of Rajini and really don't know the reason why..!!! I am not even going to go into the reasons as I don't know the reasons myself....He!he!he...

It is a special day, isn't it ... I mean the number. I don't know in how many years this is going to repeat again but I consider myself fortunate enough to experience living through this date ...

So I would like to raise a toast to "Super Star Rajinikant" on his special day to have a wonderful future with all the good health and well being... He is an insiration to so many and truely his story if from "Rags to Riches" without the backup of rich parents /education /ancestral wealth etc. Yet his humility and kindness proves that he is still human.

I can proudly say that he carried the burden of Enthiran which is India's most expensive movie ever produced and biggest hit in Indian cinema and overseas [breaking the record of 3 Idiots and Dabangg...]. He has placed Tamil Film Industry on the map for years to come...

He is the only actor who has a song written and dedicated to him on his B'day ...

This post is special for me as I wanted something featured in my blog on this date. This recipe is not a complicated one... a very simple drink that can be relished any time of the day or season.

I love "Tender Coconut Water"... so delicate and subtly flavoured. It is brimming with nutrients and minerals and it is indeed the best natural mineral water without the fancy plastic packaging or artificial nutrient additions..

Tender coconut water tastes best during the summer months but unfortunately it is winter now and I am not in India where I could have tried to get this water in the pure form. So I heavily rely on canned tender coconut water. The only disadvantage I would say is that some extra sugar is added to the canned coconut water and so it is sweeter than the natural form.

It forms an excellent base to add various flavours and it is great for parties and informal entertaining. It forms a lovely centre piece when kept in a big bowl on the table with lots of small shot glasses rimmed with coloured sugar and matching fresh flowers... A very inexpensive ingenious way to impress your guests.

For this recipe I have added rose essence and rose water to the tender coconut water to give that mild very delicate middle eastern flavour and aroma. You can definitely play around with the flavours and decorations.

For the recipe:
Tender coconut water : 1 litre.
Rose essence : 3-4 tsp.
Rose water: 2-3 tsp.
Pink food colouring: few drops [optional]

For decoration:
Caster sugar: 2-4 tbsp.
Pink food colouring : a few drops.

1. For the coloured sugar, take the sugar in a small zip lock plastic bag and add the food colouring. Close the bag and mix the sugar thoroughly until all the sugar is coated with the colour.
2. Empty the contents onto a plate and let it dry. Once dry you can store the sugar in an air tight container or a plastic zip lock bag. This coloued sugar will keep well for a long time.
3.Chill the tender coconut water until serving time.
4.Mix the rose essence, rose water and food colouring [if using].
5.Scatter the coloured sugar onto a shallow plate. Dip the glass in some water so that the rim is wet and immediately dip the rim in the sugar so that the rim is coated with the sugar.
5.Once the rim is coated with sugar, pour the flavoured coconut water into the glasses with the help of a ladle and serve immediately.

Note: You can change the colour of the sugar according to the flavour that you add to the coconut water or keep it colourless if you wish. If using fresh coconut water , you can add extra sugar to sweeten the drink.

You can add pomogranet rubies to the drink instead of the coloured sugar or even some fresh rose petals.

You make it into an alcoholic drink just by adding white coloured alcohol of your choice.

Enjoy..

Scribbled Reva.
