Lemon Rice

Lemon Rice
   Warm bowl of this sunny yellow coloured rice with a hint of lemon is always nice....esp if it is accompanied with kathrikai varuval [aubergine fries] or spicy mutton chops...Hhhhmmmm yummy, yummy..



Cooked rice: 2 cups.
Onion [medium]: 1.
Green chillies: 2.
Mustard seeds: 1/2 tsp.
Cashews : 8-10.
Channa dhal: 1 tsp.
Tumeric powder: 1/2 tsp.
Lemon juice: 4-5 tbsp.
Salt: to taste.
Oil: 1 tbsp.
Curry leaves: 1 sprig.



1.Heat oil in a kadai and splutter mustard seeds, channa dhal, cashews and curry leaves.
2.Add the chopped onion and saute until translucent.
3.Add the tumeric powder, lemon juice and rice and mix well.
4.Add salt to taste.
5.Serve hot garnished with coriander leaves.
