Iced Melon Soup

Any meal can be made complete with a bowl of soup. I know what everyone is thinking - here comes another veg/non-veg soup with the usual ingredients of carrots, bell peppers, chillies, prawns, beans, chicken, sweet corn, salt, pepper, stock, spring onions, eggs etc .... So what is so great about this one?????


Well to begin with, you need to have only 2 types of fruits in hand and Voila! U have big bowl of warming soup served cold. It is great when served in parties and entertaining friends.

It serves as a lovely appetizer without overfilling your guests. The whole presentation makes a stunning centre piece that is sure to makes your guest's jaws drop open. 

You can easily convert this into a smoothie or juice as it covers the necessary fruit intake for the day. The melons are very mellow and thick , it provides a lovely base to add more flavourful juices to it. It holds the added citrus flavours very well.


The ginger powder gives a yummy kick to the soup. As you take a sip, you feel the warmth of the ginger spread through your throat and making you feel all cosy... just what you want for the cold evenings, fabulous .... :))

Serves: 4-5
Preparation time: 10 minutes
Cooking time: 10 minutes.


Honeydew Melon: 1.
Fresh orange juice: 2 cups.
Ginger powder: 1 tsp.
Cumin powder: 1 tsp.
Runny honey: 3 – 4 tbsp.

To garnish: Chaat masala and Fresh mint leaves


Procedure:
1.Peel, deseed and puree the melon flesh. You should have around 4 cups of the melon puree [around 900 -950 ml of puree].
2.Mix all the ingredients together and refrigerate for 1⁄2 hour.
3.Serve as individual shots garnished with chaat masala and fresh mint leaves in a bowl filled with ice cubes.



Note: Do not keep the soup more than 2 hour after preparing. It tastes best when served within a couple of hours of making. I have used home made freshly squeezed orange juice. Increase or decrease the amount of orange juice if you have more or less than 4 cups of melon puree. Adjust the sweetness accordingly.

You can experiment with other types of melons and try substituting apple, pineapple, sweet lime juice in place of orange juice.- do let me know how it turns out..:)
