Coconut Rice / Thengai Saadam



        Aromatic rice specked with coconut scrapings and subtly flavoured with a hint of red chilli and curry leaves... I am starting to give a "5 STAR" treatment for this simple rice with all this fancy english descriptive words....
      This is a simple rice recipe which is quick and easy to dish up and carries off most of the authentic side dishes well.


Cooked rice: 2 cups.
Coconut scrapings: 4 tbsp.
Mustard seeds: 1/2 tsp.
Cumin: 1/2 tsp.
Channa dhal: 1 tsp.
Red chillies: 3.
Curry leaves: 1 sprig.
Salt: to taste.
Oil: 1 tbsp.



1.Heat oil in a kadai. Splutter mustard seeds, cumin, channa dhal, red chillies and curry leaves.
2.Add the coconut scrapings and fry for 1 min.
3.Add the rice and salt and mix well.
4.Serve hot with appalams and kadalai curry.
